Sigara Borek is a variation of the pastry that has a cylindrical-shaped form, hence the nickname “Cigarette Borek.” Its appearance is very reminiscent of other foods like a cannolis or taquitos, but much different in taste. You can make several types of Sigara Borek by changing the fillings, but the most common form of this pastry comes with cheese and parsley. This is how we prefer to make ours.

First place the feta cheese into a big bowl, along with egg yolk and parsley, preferably chopped. Then stir and combine the ingredients in the bowl. Place the feta/cheese mix to the side until needed.
Next cut the filo pastries into 6 equal pie slices, and spread the feta cheese mix evenly along the long end of each of the slices.
Roll the long end of the pastries to the pointed end, until it is shaped like a cigar. Be sure to wet the tip on each pastry at the pointed end, in order to seal it.
You can cook the pastries two ways. One way is to fry them in a pan filled with at least two inches of oil, turning them frequently. Once the pastries are browned, take them out and serve on a plate.
Another way is to bake the pastries. Pre-heat the oven to 350° F. Coat the pastries in butter and place them on a baking sheet. Let the pastries bake for 25–30 minutes, until they are well browned. When they are baked, serve them on a plate.
