How To Make Turkish Mucver
Mucver is a delicious recipe with Turkish origins. Usually served as an appetizer or side dish, these fritters are made with finely chopped vegetables and fried as small drop patties on a thin layer of hot oil. Zucchini is the most commonly used vegetable, with leftover stuffed zucchini often being used as the main ingredient.
Zucchini fritters can be prepared with additional vegetable ingredients as well as certain combinations of spices. Mucver is often served with a yogurt dipping sauce. These crunchy fritters have a delightful taste mix of freshly fried squash and herbs.
Commonly Used Ingredients
Mucver is usually prepared by using leftover stuffed zucchini sections that have been roll- or stir-fried in oil. However, fresh zucchini can be used as well. The zucchini is finely chopped or grated and allowed to drain in a colander.
The zucchini is then mixed with other vegetables and spices. Shredded carrot and chopped spring or green onions are the most popular vegetable additions. Parsley, mint, and paprika are added to the mixture. Salt and pepper help bring out the flavor of the vegetables. Eggs and flour are added to the vegetable mix just prior to frying. Some recipes call for the addition of feta or other variety of white cheese.
How To Prepare
The following will yield approximately 15 fritters. Grate or finely chop five or six medium-size zucchinis and let them drain in a colander. Squeeze out excess moisture and place the vegetable in a large mixing bowl.
Add three eggs, about a third-cup of flat leaf parsley, and two tablespoons of fresh mint. If desired, sprinkle in a tablespoon of dill weed. Chop up several green onions and add them to the mix. A variation of the traditional recipe calls for two tablespoons of grated carrot in addition to the onion.
